My Paw Paw used to make them when I was a kid. My cousin and I used to hunt the woods behind his house. Some times he would get up and go hunting with us. If he did, he'd make hoe cakes while my Maw Maw made bacon and eggs.

Damn those things were good. He passed about 25 years ago. Haven't had one since. That's another thing I need to cook for my children (young adults now).

We made some the last time I was at the cabin. Simple, and delicious.

Funny you mention this.

I have all my grandmother's cast iron cookware that I use exclusively. I put a little too much oil in the pan tonight for cornbread, and when I poured the batter in, it started frying on the edges. My first thought was, hmmm, time to make Johnny Cakes again . . . LoL

I always melt butter in the cast iron before I put the corn bread in the pan.
