Spent the first 20 years eating white bread. Everybody bitchin' about how bad it is, the sugars, the over processing...

So I go to wheat bread because it's better for me.

Now I hear primal screams fro chicks with tats and multiple ring gauges of metal coming out of their faces warning me about the evils of gluten.

What the hell is a brother to do?

BTW, ture gluten intolerance is a very rare condition, it's just the current food fashion.

My adopted 3 year old daughter has celiacs disease which in her case is a true 100% intolerance to gluten. We couldn't figure out why she always had terrible diarrhea and was fussy. Wasn't like she was old enough to tell us at the time.

After a few trips to her pediatrician and checking other possible things off the list. We took her off gluten and the diarrhea stopped after a few days. Took her to a specialist and the celiacs was confirmed. She does so well with her eating already, she knows what will make her tummy hurt and she avoids that food. Remember she just turned 3.

I guess the silver lining in all of this is the large number of people that think gluten is so bad for them and this has made gluten free products much more readily available and affordable. Most restaurants even have gluten free options. Olive Garden has gluten free pasta noodles.

So without this damnation of gluten by people who have nothing wrong with them it would be much more difficult and expensive for us to find gluten free food for my 3 year old.

My wife buys gluten and adds it to her homemade bread. We get it at the health food store.
