A lot of folks hunt elk out here in Montana. Have been seeing some in the back of pickups. These guys make a deer look like a dog. Haven’t been Elk hunting yet but they say you have to go back Country to have a good chance to score one. But the problem is how to get that monster out.
Two venison dishes I make a lot are.
Cut venison in thin strips, brown meat in frying pan, add onions, garlic and mushrooms. Finish with brown gravy then serve over wide noodles.
Cut venison in thin strips and brown in frying pan, drain off any liquid. Put meat in a casserole dish add spaghetti sauce, top with mozzarella cheese and back for 30 minutes.

Only by chance.Several have escaped from some our local high fence shooting galleries.......fair game year round here in Texas since they are a non-native animal.I have not taken one but a couple friends have.I have had my eye on a cow elk that's been frequenting a wheat field nearby.
