Just a newbie question...

How does the bidding process work? If you place a bid and it’s “accepted” ...e.g. you have a winning bid...BUT, the current price is higher, do you have to match or exceed the current price to stay in?

If there are multiple items, you’re winning one of them. The Current Price is for the next bidder to match or exceed so there’s no need for you to do anything.
