I'd forego the traditional Graham cracker crust in favor of a traditional pie crust...

Keep the shape the same, no sides to the crust...

Whip your sugar and cream cheese together on high(1 cup sugar, four 8 oz sticks of cream cheese)...

No vanilla...

Incorporate the juice of 7 or 8 key limes plus maybe a tablespoon of zest...

Add your (4) eggs one at a time on low speed...

Bake @ 325 in a water bath for 55 minutes...

The Cheesecake Factory makes a pretty good mango key lime cheesecake. It has a vanilla coconut macaroon crust. All their cheesecake is half-price today. Just sayin...
