Not American cheese anymore, it's Mozzarella, pro;;y because of pizza and the cheese mafia.

FWIW, American cheese (product) is not really cheese.

An originalΒ DublinerΒ is a sweet, mild and matureΒ cheeseΒ taking over 12 months to develop the sharp robust flavour and texture of mature cheddar, the nuttiness of SwissΒ cheeseand the bite of ParmesanΒ cheese. It has a high content of calcium, due to the calcium lactate crystals in theΒ cheese.

Oh man, I scored some aged provolone from Wisconsin a month ago that is amazing! This is one good thing about living in flyover country, I'm about 45 minutes from some amazing cheese. 😁

we did a tour of the Tillamook cheese factory...had their grilled cheese with tomato soup, loaded with cheddar chunks, with a side of garlic cheese fries...delicious..
