Sliced Jalapeño would be good too, or diced New Mexico Hatch Chillies.

Mixing the chicken and enchilada sauce sounds like a better way to go. I just made this up today, we had the chicken and the chips were on hand. More important, my wife was tired of the things I've been making while she is recovering from rotator surgery.

Yeah... dog walk was done around 8am. Still pretty dadgum humid. Took the dog to the park before the rain came.

Our neighbor brought us chicken parmesan and pasta, so I got that to look forward to. Her and my wife (both from the Philippines) are always trading food.

11:15am home.

Since then: On the f'n phone with Optum Rx/United Healthcare- trying to get to the right department for my unpaid claim I am out of pocket $850 for.

It is killing me. The music is awful and can't be turned off. I am being put on hold multiple times, sometimes for 10 minutes at a time, for the first time from someone who seems sharp and on the ball, for like the last 45 minutes...

Spent two hours on this yesterday to no avail...

Yesterday's layabout day turned into wiring harness building day. Sat in the garage for about 10 hours to make this.

I didn't want to hardwire anything and leave the option to return to stock as easily as possible. So I wired in some connectors that when plugged onto each other, its stock. But then the harness I built above plugs in between those and feeds signal to the digital signal processor and amplifier then out to the speakers. Don't have a long enough power cable - that comes in Thursday, so I did a function test with what I had and it sounds incredible. I haven't even tuned it yet, just wanted to ensure I made the harness correctly.

Bought a 18lb brisket, on the smoker now. Hopefully it's done before I leave for work tomorrow night. Can't pass on $4/lb brisket. Also scored 15lbs of 80/20 ground beef for $30 and I'll grind the brisket trimmings too.

No biggie, she deserves a few favors. She's been helping me deal with scheduling transportation for my sister's trips to the Radiology lab...it's always time consuming and forehead slapping frustrating dealing with Kaiser and their myriad departments and a few uninformed and unmotivated employees...five more weeks...and hopefully the tumor is gone and my sister's physical condition improves...

Brisket trimmings gave me 3lbs of ground beef. If I had a bigger grinder I'd be better off buying and grinding whole briskets when they're on sale. Regular price on 80/20 is $5/lb 85/15 $6.50 90/10 $8/lb. Brisket was $4/lb.
