I compare mine to Jamesons Irish whiskey, though mine is a little young yet, currently only 4 years old, I take a taste every year, and it has improved with age. I plan on a minimum 8 years aging, in the cask, before bottling, but may be longer depending on the taste. I also have a 3 year old, and a 2 year old, as well as a batch in the works, will rack it into secondary sunday night, Then distill in two weeks.
I brew a fair amount of beer, as well. I prefer Stouts, brown ales, and IPAs. I also make Mead, and wine, both fruit and grape. I live next door to a University Experimental fruit substation, and the bring me enough fruit to make 60 gal. of peach wine, 40 gal. of strawberry wine, and 100 gal. of red table wine. This is every year. I may seem like a lush, but I have a town full of friends, and throw parties on a regular basis, though I consume just a little bit myself, 2-4 glasses of something every day, wine with meals, beer sometimes, depends on the food. And always a shot of scotch, or Irish whiskey before bed. I may make alot of stuff, but I go for quality rather than quantity. Yes this was my primary hobby, before I started collecting cigars.
