Yeah... night shift always throws me off. I sleep well enough because I have my room really dark, but I definitely sleep better at night.

We shift back and forth every 4 months. Thankfully this May we go back to days... in time for fishing!!

Welcome back to Monday fellas.

Gonna take the train up to Chicago today and check out the car show.

Wife needs a new car. When we got married, I said I wasn't gonna buy a jewelry ring, but would buy her a keyring. Bought her a one year old car. That was almost 10 years ago.

I think I'll try a lease this time. We don't drive much. We take a few long trips, but still average under 10k miles a year combined.

Excellent question! I don't really know... I figured I'd read the recipe book and stuff.

Saw a video of some ribeye steaks they did, then quick seared after... looked pretty damn good. I got a couple fat ribeyes out of the freezer last night.

Brother, I am still above ground, breathing and not going hungry, and not alone so absolutely got what I need and then some, Herfing and grateful for it.

This is where at times I falter. It helps when I see this with other folks thus helping keep my mind right. I am such a sissy biatch when it comes to doing that on my own at times.

Last day of the Chicago auto show. Was gonna head up there with the boy but it took nearly an hour and a half to get even close to the train station, then a train stopped across the road so we missed the train to the city.

Not interested in driving the rest of the way and paying $25 to park so we went back home.

The big problem with boiling meat is it washes out most the flavor... these water baths don't actually have the meat come in contact with the water though, right? The idea being they cook in their own juices i believe? And you can set the temp of the bath and leave the meat in for as long as you want, it won't ever go above that temp... so you cook a steak to exactly the temp you want and then achieve the desired "Maillard reaction" with a quick sear... seems interesting...

That's right, Opie... I seasoned 2 ribeyes with kosher salt, fresh cracked pepper, a dash of evoo and freshly smashed garlic... put them in a ziploc bag, and dropped them into 130 degree water for 1.5 hours. When I took them out, I patted them dry and put them in a preheated (really hot) cast iron skillet with a tbls of oil and butter for a sear on each side.

The seasoning was infused well, and the quick sear got the outside crisp. The steak was juicy, done perfectly medium rare, and so good. I'll text you a pic...
