cheesecakes, depending on the proportions of ingredients, frequently rise while baking. I thought this one was going to overflow the pan. It didn't. But it was close! As they cool, they deflate and crack. You would not believe the rich chocolatey goodness!

Looking good. I'm betting Billy has just the right maddie to accompany this baby. How about beverage? I'd go for a stout or strong coffee.

Billy, I have eaten a piece every day for the last three. Each one seems better than the last. It is rich yet mellow, the individual ingredients having properly "married". Cheesecakes, like cigars, improve with a little age!

Stop it! I can't take it anymore....I am going to the mailroom mabye it's there... 🙂
