I couldn't find a decent recipe, so I made one up.

I fried up some bacon to get the juices in a skillet and I browned the Venison Cubes in the bacon fat.

I put the browned (but not cooked) venison into my crock pot. Ok, it's my wife's crockpot but that doesn't matter.

I added normal stew stuff:

Celery, carrots, turnips, garlic and onion.

Cut up three chipotle peppers and add to the mix.

One can of beef broth.

One can/bottle of Good stout beer.

Cook on low for 10 hours.

Unbelievable.

The venison was tender, and the smokey chipotle flavor, coupled with the chocolate nuances from the stout made for a fantastic flavor combo.

I added additional hot sauce to mine, but there's no need if you don't like the heat.

When I lived with my father, we ate deer just about every day/every way. You recipe sounds like a good one. When venision is cooked a long time in moisture you will have excellent results. IMHO, it is better than beef when cooked this way.

Heres a really great tip (you may already know it); before preparing deer steaks, or other lightly seasoned dish, soak them in milk for a few hours. This almost eliminates any gamey taste.

a splash of lemon juice or soaked in lemon water has the same affect. We have used both and I prefer the juice.

Tony,

I searched google, but nothing whet my appetite.

I had a hankering to use a good stout, and those chipotles were just sitting there in my cabinet.

There was no gamey flavor, but I'll keep those tips in mind on my next venison venture.

'gater, that recipe sounds terrific (though personally, I'd probably have skipped the turnip)

I have peppers but no chipotles. I may try this during the games this week.

Tony,

The subtle flavor of the chipotle really added something. If you don't get any, try adding some liquid smoke.

Just a tiny drop will do.

Good luck.
