One of the schools in Metairie LA has a fair once a year. Yes the set up is not very efficient but it's only once a year. This is the first year they didn't do whole pigs. The racks are mounted on motors so they rotate all night. They must have had about 4-5 cores of wood stacked before it was lit.

They also had 3 gigantic cajun microwaves with about the same amount of meat inside.
