Ok Morons & Yankees

Here is an authentic chili recipe from the 6666 Ranch my dad got from their Chuck Wagon cook 40+ yrs ago ,,,

Texas Red

3lbs Round steak coarsely cubed

8 tbls ( GOOD) chili powder

1tbls ground Mexican Oregano

1tbls crushed cumin (not ground) buy cumin seed and roll it with a rolling pin

1tbls salt

1tbls paprika

1/2-1tbls cayenne

4 cloves garlic

1 large onion diced

1 tbls tabasco

1 1/2 qts water

3 tbls Masa harina ( fine ground white corn meal), not regular corn meal, as a thickener

Brown cubed steak in a dutch oven. Remove and drain fat. sweat onions and garlic. return meat and add all ingredients , except Masa Harina,

Simmer 2 1/2 hours till meat is fork tender,

Mix Masa with 1/4 water to a slurry. stir in to thicken . Let cook 15 mins more,

Serve with, Corn bread and IF YOU MUST Pinto beans ON THE SIDE,,,

This is a guarded recipe. So, feel fortunate...

eat me & my chili

Sounds like it would be good. I would add a square of dark bakers chocolate and perhaps a second onion.

For those cannot find masa flour try putting a can of hominy in a blender before adding it to the chile. Hominy is also a great low octane replacement for beans.

Sounds like swill.

Notice the recipe calls it "Texas Red" not chili.

Texas Red boiled meat mush.

Here's another recipe:

2 lbs stew beef

4 cups beef brooth

6 tbls chili powder

2 tbls paprika

Mix all ingredients in a pot.

Cook on low boil for 80 hrs until all liquid evaporates.

Delicately spoon mush into cereal bowl.

Sprinkle with parsley and tell Texans it is gourmet.
