I believe Mahi means "strong" in Hawaiian.

If this is true, the name sure fits... because these fish put up one hell of a fight!

Fish tacos for dinner today. Fish tastes better when you catch it yourself... true story.

And you're right. It does taste better when you do the work. I say the same about deer and the garden.

Blackened mahi, flour tortilla, lettuce, tomato, red onion, chipotle white sauce. I had 2 small filets with no tortilla, as well. Just fan-freakin-tastic.
