I dare say, and some may consider this blasphemy, that pork belly burnt ends are better than brisket burnt ends. 😱
This is how I do them:
Buy a pork belly at Sam's or Costco.
Cut it up into 2" cubes.
Dust those cubes with your favorite rub.
Smoke them at 225-250 for 2 hours or so.
Rub with a little BBQ sauce and cook in a covered aluminum pan for an hour.
Remove from pan for another hour on the smoker to crisp up.
