Sliced Jalapeño would be good too, or diced New Mexico Hatch Chillies.

Mixing the chicken and enchilada sauce sounds like a better way to go. I just made this up today, we had the chicken and the chips were on hand. More important, my wife was tired of the things I've been making while she is recovering from rotator surgery.

cold water and a cigar on the patio
shoe goo 3 pairs done and out to cure
recycling out for pick up
blew off the front yard and canned it

Layabout and pool in my future.

Yeah... dog walk was done around 8am. Still pretty dadgum humid. Took the dog to the park before the rain came.

Our neighbor brought us chicken parmesan and pasta, so I got that to look forward to. Her and my wife (both from the Philippines) are always trading food.
