First time I've heard of nacholadas but sounds yummy. I could go for a hunk of nacholadas right about now. I'd need to find a source for the jalapeno seasoning though. Was it kinda soupy by pouring the enchilada sauce over it? I'd think tossing the shredded chicken in a bowl with the sauce and jalapeno seasoning then layer it on the chips might be less soupy. Adding diced and sliced olives would be on my radar too.
