New Chinese restaurant opened in town. They own one called Long Noodle in the town next door and they have positive reviews. The owners bought out another Chinese restaurant in town a couple yrs back (I didn't know that Kenny's Chinese as bought out by the owners of Long Noodle).

An older Chinese restaurant went out of business during the COVID shut down, they kinda sucked anyway. Owners of Long Noodle bought that place, redid it and opened in the past couple weeks. It's called Four Seasons. I'll have to give it a try.

My litmus test for American versions of Chinese places is how good is their hot and sour soup (I love hot and sour soup). I predict that there is an order for take out from there on the horizon.

I love hot and sour but I want Sichuan style. Chinkiang Vinegar Is the secret. I never could make it right until I figured that out.

Honestly, I couldn't tell you. I know there are distinct differences but I couldn't define them. I'm not a specialist on Asian food distinctions. I just know what I like. If I had to guess I would guess mostly Szechuan but they offer a mix of stuff.

I'm a big fan of curry too and they all do some curry. My guess would be Thai based curry. I like it hot enough to make my scalp sweat. We don't have a Thai or Indian restaurants in the area but I would like to see one open up somewhere, I would support it as long as the food is good.

These are the "Chinese" ones in my town and adjoining towns.

Interesting menus at those 4 places. They either mix different types of Chinese cuisines and / or even ethnic foods. And yes, hibachi is Japanese. My all-time favorite meal is the chicken hekka my Dad would make in the living room. He would fire up the Shichirin (hibachi), bring it in, use the big cast iron pan and make the dish right there. So many ingredients and there was an order to it all. But like many recipes, nothing written down.

Looking back, in that old wooden house, bringing in a live fire was kinda crazy! [gonzo]
