healthier to roast the eggplant however you choose until the skin puckers.
Rip it open, scoop out the soft flesh, mash it up with EVOO and s&p and other seasonings you like (tahini?) and make a homemade baba ganoush.

Gonna try that. We eat healthy 6 days out of the week. Saturdays we eat whatever we want.

So of course we fried some zucchini yesterday. Tough to beat that, but can't have it very often.

I've started measuring the squash/zucchini haul in trash bags. Got 2.5 trash bags today and our first 5 or 6 cucumbers.

Jeebs,

Wife made a pan of that diced zucchini/squash, tomato sauce & cheese bake today. Freezing it.

She also made one with sliced zucchini stacked in doubles, with hand sliced Bridgeford pepperoni, mozzarella cheese, spaghetti sauce, dried basil, oregano, garlic powder, salt and pepper.

It was killer. I count calories and space my meals throughout the day; but zucchini is so low in calories I was able to eat a half of a pan of it.

I went and picked that zucchini fueled by the zucchini I had just eaten. That's efficient. Lol

Sorry to hear about the floods in other areas of the south. Hope you are doing ok down there in east Texas. Still hasn't rained here. Cloudy though.

Other day I told my wife that you live more rural than us because we get two radio stations and you only get one. Lol

Weedeated both gardens with the FS 70.

Can't weedeat inside of the corn plot anymore. Some of that corn is nearly 6 feet tall.

Looks like rain, feels like rain...still no rain. Lol

We bought a deep freeze but I'm not sure it's going to be big enough.

We were going to get one that was 15 to 17 cubic feet, but I thought that might be too big, so we got one that's 8.8 cubic feet in size.

Wish I would have went bigger. Still might, we'll see.

We're always short on something. Last year it was corn and potatoes, this year it's prolly going to be space.

If we run out of freezer space we'll just have to can more.

Well, no watering today. Heavy thunderstorms @ the moment.

Got our short fence built, within the big garden, for our second set of green beans.

Didn't get a chance to plant them before the rain.

Got in our second set of beans in, and our second set of potatoes.

We are trying "potato towers" as a growing method.

We take that 4 foot wire fencing that we have and make it into a cylinder shape using zip ties.

They're maybe 2 to 2 1/2 feet wide and of course 4 feet tall.

Put down straw in the cylinder, then dirt, then potatoes, then more dirt.

"Hilling" is achieved by just adding a little more straw and more dirt.

Added 5 of them today for a total of 10. Hope it works well. We'll see...

Robert glad some of the advice has been helpful. I’m really excited to hear about this corn when it comes off.

Had a squash sammich for lunch yesterday. Might have some fried cabbage tonight. I’ve got a couple heads in the shade that I think are just about right
