Talking bourbon... I got a 5th of CLC when I left in 1987, So I have had it for 16 yrs.unopened. Does it get better or only if it is aged in original barrel. Don't know what to do with it. I prefer scotch myself ....

Once it's bottled ... the aging stops.

Why does wine continue to age in the bottle? Champagne, etc... But not bourbon?

Certain beers will also age in the bottle because a little yeast is put in there with it, or something along those lines.

I too heard that Scotch and other distillets (spelling?) will not age after bottling. Maybe that is why. They are distilled instead of left to ferment.

It was originally called CLC (Canadian Lord Calvert) now it would be called LCC or (Lord Calvert Canadian)... Yeah I know Canadian Bourbon? It was a gift what can I say?

Several years ago I was gifted a 20 year old bottle of VO. It was unreal how good it was. All of the flavor but very smooth. My wife even liked it, and she usually does not prefer whiskey. I've always been under the impression that whiskeys, tequilas, and rums get better with age. Interesting comments on aged scotch...exception to the rule?
