get the biggest one you can get and the slower the better. Ain't nuthin' like slow smoked meats.
use lots of good wood. You can use Hickory, or any other good hard wood that is avialable in your area.
Soak the wood in water and follow directions that come with the smoker.

rugrunner, I have the Weber Smoky Mountain or WSM for short and I'd say it's probably the most fool proof charcoal water smoker out there. Check this website for details.

http://www.virtualweberbullet.com/

Then check out this site.

http://store.yahoo.com/epod2000/smokers.html

Then go to yahoo groups and sign up for this site, it is a site full of people that use the second smoker I referenced.

Is this at your home? If so lets see more of your yard. Looks like it's a nice place...

This one is great for small things, no more than what you see will fit. you don't need a electric one as this one had a electric burner but you don't need it. I just start the heat with a few charcoals and add the soaked hard wood, any thing works fine. Mine has a bowl under the very top that I put in water and spice or wine to keep it moist. The lower you can keep the temp the better. It took me 4 to 5 hours to do the chickens but if it's sausage only at the most 2. I would like to get one that I have seen that is longer that holds more as i havr seen but this one does the job. You can only eat so much and as it is I give a lot of what I smoke away. It's pretty basic once you do it a few times.

I'll have to post a pic of my Weber smoker in action. Baby Back Ribs and corn on the cob. I like how yours splits up so I assume you can tend the bottom rack.
