Blam blam blam!

Seemed appropriate, given the political malarkey of the day.

Added water to the tray just now.

110F internal and looking nice. Tons of fat dripping down.

Electric smoker controls set, going to bed and don't have to worry about it. Love this thing.

10-4 thank you sir. Only done a couple chickens so far and they were incredible. This is my first pig bit, and pork is my meat of choice.

240 in the smoker a reasonable temp to hold?

Yes, I usually keep mine between 230 and 250, so that's right in the ball park. Pork is very forgiving, but overcooked is much more preferred than under cooked. If you overcook it, it shreds really easy and still tastes great. Under cook it and it is difficult to shred, and you have the added bonus of chewy meat that may or may not have tapeworm eggs or trichinosis in it.

Assuming your pork comes from a USDA inspected and certified facility, this is basically unheard of these days due to modern practices on how the animals are raised and how their food supply is controlled. It can be an issue with wild game though. Furthermore, the bacteria which causes trichinosis is killed in less than 1 minute of exposure at 140F, and instantly at 160F. Tapeworm eggs are even more fragile and die at 125F.
