I had an awesome philly roll yesterday... and then I had an idea!!

So I went to the local joint and asked if the chef would make me a philly roll... only instead of salmon, I wanted yellowtail belly.

Oh... My... Goodness. Melt in ya damn mouth, good. Now I need a beer.

Philly roll has cream cheese right?

I can't abide by sushi with cream cheese.

I like the hamachi (yellowtail sashimi), and I love me a spicy tuna roll, too. Just felt like having the yellowtail with the cream cheese and avocado.

That yellow-tail sashimi from the fish we caught was excellent... I need to hone my filleting skills though...left a lot of tasty meat on the bones and the skin...

The yellowtail belly meat is so good... costs more at the restaurant, too.

That's the part of the fish I need to perfect my knife skills at...left some good meat on the skin...
