Checked the radar cause there's some booms coming from outside and my sump pump's cycling a lot. Looks like the same storm is passing over me too.

No hail here, I don't think. Lots of wind, rain, and thunder.

And the rain slowed enough I think I should be able to use the WSM in the garage doorway mostly covered by the eaves and block the wind with a trailer wheel and garbage bin. Much prefer wood over electric to smoke something that goes this quickly. The electric smoker is convenient, but it only smokes while heating - and smokes a LOT while heating. Once the temp's been reached it don't smoke no mo. I've had some fish get oversaturated and bitter with wood smoke, and others barely get smoke flavor. It's much better for longer smokes that see more heat cycles.

Alls I got is hickory and oak in flakes for the electric too. I prefer peach. I can just do the fish over lump charcoal in the WSM.

Brine is as done as it's gonna get. This was a big slab, 3 pounder trimmed. Probably should've done 6-8 hours instead of 4, but I need to keep tomorrow open for sleeping.

Rinsed and put on the drying rack. Once the meat is good n sticky I'll light the smoker.

^Yup... trying to stay up later, so I can sleep later. Gotta work tomorrow night.

Smoker's started. Couple briquettes lit with a blowtorch in the middle, lump all around the perimeter.

Fish isn't quite ready to go on, not sticky enough yet. It's too damn humid after the rain. But it's gonna take at least an hour for the smoker to come up to temp and stabilize. Hopefully it's ready by then, if not.. still going in. I've done worse.

^I'm not sure what that is all about, but I am sure there's an interesting story behind it being plastered everywhere.

So, my tacos were definitely fantastic.

Pumped out the pool and found a small hole, but it's in an odd divot the appears to be in the concrete of the slope near the deep end. Small hole, but the divot is about 3 inches across and a half inch or maybe a little less in diameter. I guess I will be ciphering on how to fix that thing myself. I figger that I may be better off to fill in that divot or it will happen again. Lots of small rocks from a bad concrete job for the pool surround by the previous owner. He didn't know how to do concrete work and it's cracking and washing rocks off constantly. Never a dull moment around here.
