Ok Morons & Yankees
Here is an authentic chili recipe from the 6666 Ranch my dad got from their Chuck Wagon cook 40+ yrs ago ,,,
Texas Red
3lbs Round steak coarsely cubed
8 tbls ( GOOD) chili powder
1tbls ground Mexican Oregano
1tbls crushed cumin (not ground) buy cumin seed and roll it with a rolling pin
1tbls salt
1tbls paprika
1/2-1tbls cayenne
4 cloves garlic
1 large onion diced
1 tbls tabasco
1 1/2 qts water
3 tbls Masa harina ( fine ground white corn meal), not regular corn meal, as a thickener
Brown cubed steak in a dutch oven. Remove and drain fat. sweat onions and garlic. return meat and add all ingredients , except Masa Harina,
Simmer 2 1/2 hours till meat is fork tender,
Mix Masa with 1/4 water to a slurry. stir in to thicken . Let cook 15 mins more,
Serve with, Corn bread and IF YOU MUST Pinto beans ON THE SIDE,,,
