Up at 4 and nuttin to do. My internal clock is set for summer when I needed to get out early to beat the heat. Now it doesn't get light until at least an hour later but my snooze button doesn't work.

Two weeks until the closing on our mountain house sale and everything is moving smoothly so far. The estate sale is today and Friday and the company running it guarantees they will clear out and donate anything that does not sell.

It's about dang time, too... I've had a couple of new guns for awhile and have yet to put rounds through them. I will today. Glock 43 and a Beretta M9.

Went to the dealer, service advisor was super apologetic saying we tried everything to get it to throw a code. We even submitted paperwork that we confirmed the slipping but FCA denied it without a code. She showed me the stack of like 20 pages of paperwork showing line pressures and spikes/drops that are abnormal and indicative of a slipping clutch pack. But FCA denied the warranty claim because there are no codes.

She also told me my truck isn't alone. They have one in their yard that has been waiting 8 months for parts on an approved trans replacement. She said honestly, go trade it in, it's not going to get fixed.

Called Kelly the tranny guy. He says $3600-4k for a 66RFE. I'd called another local shop a coworker used in the past and they said $5-6k. Kelly rebuilds them, I think the other shop installs rebuilt transmissions.

It did gain a check engine light for an oxygen sensor while it was there. But I'll do that myself and save $400. Once that's fixed then I'll go to Carmax and see what they'll offer. If it's much less than $30k, I might have the tranny guy do it. My father in law wants the truck if the trans is fixed and said he'll pay up to 30.

More call offs at work and come Sunday the incentive pay for extra shifts is going away so I'm going back in for day 9 or 10 I don't know what day it is anymore. Hopefully I can do it through Saturday night. I looked at my timecards last night, I've barely worked any overtime this year. Usually by this time of year I'm over 400 hours OT but I'm at 180hrs. I do have 470 hours of PTO though.

Good Thursday afternoon! Up late this morning, it's 58 on the way to 76° today.

Roasting coffee today and Mrs. 363 is cleaning out the pantry closet. As a food horder it must be filled until overflowing at all times, however, just items in the front of each shell are used and the rest wait until they are expired and occasionally cleaned out and discarded. I know most of it is still edible but it tastes funky. I'd rather donate cash to a foodbank than the food I don't want to eat.

We were on a ramp by ourselves merging onto I-680 freeway. He was going 45 about to merge into 65mph traffic!

I’m trying to plan my drive across Arizona and New Mexico based on the least chance of Indian attacks. I’m looking for towns with “fort” in the name.

Oh, that reminds me...been eating this for lunch and sometimes dinner...

Slow Cooker Olive Garden Chicken Pasta


Ingredients

1.5 lbs. boneless skinless chicken breast (1.5-2 pounds works fine) I used 3!
16 oz. Olive Garden Italian dressing (or any Italian dressing you like) Note- olive garden dressing is high in sodium and can be salty. Choose a lower sodium dressing if desired. I used the 32 oz!
1/4 cup grated parmesan cheese I got the gourmet shredded container
1/4 tsp. black pepper I hand cranked pepper till I couldn't see hardly anything anymore
8 oz. cream cheese I used 2

Add these items after cooking time is up:


After removing the chicken I used a stick mixer to whip up the "sauce" into a frothy oooy sauce. I also added a 1/4 cup of corn starch and some flour to thicken it up a bit. I didn't want it runny. I also drained some medium heat chunky salsa and added in sliced jalapenos to wake it up a bit.
16 oz. penne pasta cooked according to package directions and drain well
1/4 cup parmesan cheese

Instructions

Add the chicken breasts to the slow cooker.
Pour over the Olive Garden Italian dressing and sprinkle over the parmesan cheese and pepper.
Place the cream cheese on top.
Place the lid on the slow cooker. Cook on HIGH for 4 hours or LOW for 5-6 hours.
When the cooking time is almost done, start cooking the pasta on the stove top as directed on the package.
Shred the chicken with 2 forks. Drain the pasta and add to the chicken and sauce. Stir. Sprinkle over the remaining parmesan cheese.
Serve and enjoy!


I also top with dried onion (think green bean casserole!) and top with 6 blend Italian cheese to make it gooy on top. Served with garlic toast or bread sticks and it's just like the restaurants...only better because you can alter this to fit you and your needs. Actually thinking about making this as a side for the holiday meals. Its that damned good!

It's worse here, drivers expect traffic to move over and let them in. Worse, some idiot drivers actually stop on the F'ing on-ramp rather than getting on the gas and merging into traffic. Even when there is no traffic, they will get on the 70 MHP freeway at 45'ish and slowly speed up to more than 70. SMDH. fog

I did go back to the d1ck doc a while back when the swelling and pain came back while building a deck. He said the balls are fine. What's swelling is the granulomas I grew after the procedure. It'll take months to years for them to settle down. But the pain has gone away.

I bought my very first brisket this morning. Got a little 8 pounder for $4/lb.

I'd stopped yesterday and they only had one in the case, a 25 pounder for $100. I've never cooked a brisket, I don't want $100 on the line for my first time. $32 is more reasonable.

I'm not sure how I'm going to do it. When I bought it I was thinking smoke for a few hours then vac seal and sous vide to finish. But I have a tub of wagyu tallow from south chicago packing so I could smoke, slather it up with beef tallow and wrap in butcher paper and finish on the smoker. I need to do a little more reading before I decide on how I'm going to do it.

My brother in law did a brisket last year and it was dry, in line with my experience with beef in the past. I've never had bbq restaurant brisket either so I don't really know where it needs to be.

The only briskets I really have experience with is corned beef. When they're on sale in March I buy a lot and desalinate them, smoke em, and make pastrami.

Another chapter into my exploration of eating beef. Always thought I hated beef. Turns out I just hated beef that was cooked wrong. The only beef I really enjoy is italian beef sammiches, ground beef things, and crock pot chuck roasts. But I've been expanding my horizons and trying new things and I've learned that a lot of the beef cuts I said I don't like turns out I just don't like them cooked the way I've had them cooked. Skirt and flank steaks not long ago in the sous vide were fantastic. I remember my uncle grilling them on vacation as a child and they were even tougher than the sirloin steaks my dad would make every sunday that were grey all the way through.

My childhood experience with beef is what drove me to chicken and pork. I always though meat had to be cooked to a uniform color throughout. You can make some damn good chicken and pork with a uniform color throughout. I just never really tried to get back into beef until my wife got me a sous vide stick. Haven't tried real steaks yet. I do want to.

Steaks are simple to cook, don't need to over think it. Easy peasy way is as follows:

I typically use a NY strip cut. The rub is just salt pepper and garlic powder and/or onion powder for seasoning. Sometimes a premix Montreal steak seasoning or something or other premix steak seasoning instead (they generally are all the same: salt, pepper, garlic, onion, based stuff). Whatever I grab out of the spice rack. Keep it simple.

Sear it in a cast iron skillet, (I usually set off the fire detector when I sear them if I forget to turn on the stove vent). Then put the skillet into the oven to finish it of at medium rare.
Take it out, let it rest while steaming whatever veggie you want as a side.
Eat with whatever starch you prefer: baked potato, tater tots, fries, roasted potatoes... Could probably do rice too but steak and potatoes seems like a perfect marriage.
