Trying to make fried chicken again today. I've failed on several attempts, can never get a good coating on the chicken it always just sloughs off.

Gonna texturize the chicken to see if I can get the batter to adhere better.

I'm following a recipe this time. They say flour dip, then egg wash, then flour again like you mention.

I think I've just always done it wrong. I've only tried frying stuff maybe a half dozen times. How does KFC and Popeyes get that spikey breading on their chicken?

I've fought the same battle you have... I finally got my spicy chicken breast dialed in to where i thought it was better than chic fil a... but I haven't done it in a while... here's what I remember...

Dry the chicken really well... really well....

The first flour coating is very light... you just need enough for the egg wash to stick to...

Buttermilk with the egg wash helps give a thicker breading...

Double dip... flour, egg wash, seasoned flour, egg wash, seasoned flour... the second egg wash needs to be just a quick dip... but they can sit awhile in the last flour dip...

In my experience, the first few pieces of chicken that go into the nice clean flour dip end up being much less satisfying than the last few pieces that go into an already used flour dip that has little flour coated pebbles of egg wash and buttermilk floating around in it...


That's what I remember of my experience... I need to the some chicken and give it another go....

Holy carp that fried chicken was amazing. Turns out I just been doing it wrong. This is gonna be dangerous....

In other news I called my trash company asking if there was any way to reduce rates, they said I already have the discount applied to my account.

So I told them to close out the account. They didn't argue. But they said they'll charge $50 to pick up their trash bin next week. I asked if I could just bring it to them for no charge, she said yes. Yard's 20 minutes away no big deal.

Called a couple other companies, only one other services my location. Trash and recycling $104/quarterly. $66 quarterly for trash only. But since the county closed their recycling drop off ive been trashing everything and burning paper. With Republic if I still had recycling, would be $450/quarterly.

Should've done this years ago.
