Ribs smoked, cooled, vac packed and freezered.

Salmons smoked, cooled, vac packed and freezered except 1lb turned into a dip/spread for family thing tomorrow. I subbed dried dill instead of fresh cause grocery store wanted $5 for some sad looking fresh dill. Bet the sad looking stuff still tastes better than the sad tasting dry stuff. Oh well.

Two butts rubbed and on the smoker at 1800 to go overnight. Gonna stay up or at least stay out of bed till midnight, refuel and should be good till the morning.

Had to make a quick run to Menards for more hickory chunks. I know people say you should use apple or cherry for pork and I had those but I prefer hickory on damn near everything.

How's those butts coming along Damn?

Local kid started his own BBQ business. Gave him a shot on some (4.5 pounds) of pulled pork, jalapeno cornbread, and tater salad. The three of us rarely fully agree on anything, foodwise. It was the exception. The kid killed it.

Got two meals out of it and still have a couple pounds left. Don't think he is charging enough ($55).

The rest is going into the freezer.

Morning gents

I love me some smoked meat but I would not touch nor rub danm's butt.

My body clock wakes me up around 4:30 to 5:00 AM no matter what day it is. It doesn't understand that weekends are for sleeping in.

Typical pasta sauce with ground beef and hot sausage is in the crockpot. Just let it simmer low and slow during the day for eatin' later with some garlic bread. The question is, spaghetti or angel hair? It's a tough call that I'll have to deal with later. Might need a nap to ruminate on such a difficult decision.

Prolly make some apple crisp too.

Gotta look into booking flights back to the homeland (WI) for early August. Boston to Green Bay or Milwaukee or Madison. Prolly into GB, I'll have to look. Then take a helicopter and land on 8track's front lawn for a surprise.

Got up at 7 and went out to check on em. Pit temp was only 205 so it was time to refuel but meat probe was reading 201 so I pulled it and poked the meat and it was done.

Let em rest, shredded em, vac bagged and freezered to bring to Gridlife.

Gonna smoke some chickens today.
