Black (cast) iron skillet hands down.

Most people ruin the seasoning by washing them is soap/detergent water instead of rinsing with water and wiping with cooking oil. That is why it's called a black iron skillet. [fog]

Oh, if I had to pick one and only one - it would be one of my high-carbon woks. There is very little that can't be done in one.

Actually, I like the cast iron dutch oven, its an awesome multitasker plus you can take it with you on camping trips

Le Cruset non-stick fry/saute pan. Got one for Christmas last year. Has the weight and cooks like cast iron with the advantage of a non-stick coating. It has quickly become the go-to pan in our kitchen.
