I got a Bug-A-Salt for Christmas....can't wait to use it. I saw a couple flies outside yesterday, so that means hunting season has started. May need to leave a window open to lure some in. haha

We were talking about Tri-Tip in the last thread... I figured I'd just leave that right there. I damn sure wish I could find some Tri-Tips like that in my area. All the fat is always trimmed off... I'd prefer the fat to be on there.

When I cook briskets I just cut the larger chunks of fat off. I prefer to cook it with the fat and trim it a bit after cooking. It's easier to do, and cooking it with the fat makes it taste awesome.

I cooked mine to about 145-150 and sliced right away... lots of juices but i shoulda pulled it sooner... was very good.. will do it again soon... Mellow

I love slow smoking beef, especially Tri-Tip or Brisket. I also have a few excellent rib recipes, and no one does a steak quite like I can.

Have to tried a real deal butcher? Mine can get them, but most go your way.

I think there is one actual butcher shop in the the town where I live, and he's expensive as f***. Sam's and Costco are where I buy my meats. Every grocery store has a butcher counter, though.

Maybe I'll ask one of the butchers in Sam's or Costco if they have any untrimmed.

Yep. We actually zapped one with a M2 50 cal MG at Fort Ord in the early 80's. Dumb thing walked out on the range. Oops.

Two of our reservists owned California Meat Packing, they whipped out the knives and cut that sucker up. Very paleo. We were trendsetters like that. We ate beef all week, they took multiple coolers home. Coyotes made out like fat rats.

My caution to folks doing that, if you're actually getting a actual half or whole beeve, there is a LOT of waste. Bone, trimmings and such. If you don't go through a really reputable rancher or processor, you can really get raked over the coals. It seems cheap up front, but the per lb price what what you actually carry out can get pretty steep.

You'll pay for the bones, but won't get them. The butcher will smoke them for dog treats or sell the bones to restaurants for stock. I make sure to mention that when I'm negotiating. Most are shocked I thought to bring that up.

I usually have them cut them for me and keep the bones to make my own stock.

Like anything, buyer beware.

Check the commissary. The meat guys here order stuff for me no problem. And if I buy the whole "unit of issue", what ever comes cryovaced in the case? They give it to me at cost usually. It's worth asking.
