I ran outta money. Left home with $600 in my wallet, and used credit card for gas.

Wife wanted to do things yet but I think our last couple days just gonna be sitting by the pool.

So.... with a nice comfy jacket, the beer appears to be holding about 58-60F overnight. Not ideal but appears to be fermenting, albeit slowly.

Need to figure out now how long I want it to sit in this fermenter, and whether I should move it off it in a few days into a clean fermentation vessel.

An ADVRider on a Ural was riding down a back country road. Doing about 30 miles an hour. He notices a cloud of dust behind him, closing fast. He sees that it’s a three-legged chicken running down the road. The darned thing actually passes him!

Well, the ADVRider goes WFO, getting up to 40….50….60 miles a hour, but he just can’t pass the chicken! Finally after several miles, he sees the chicken run up a farm lane and into a barn behind a farmhouse.

The ADVRider follows the chicken up the lane, knocks on the door, and greets the farmer who answers the door.

“You’re not gonna believe this,” says the ADVRider, “But I just saw a three-legged chicken run up your lane. The damn thing was doing better than 60 miles an hour!”

“Oh, yeah,” says the farmer, “we’ve been breeding those chickens for years. We figure everybody wants a drumstick, and this way there are more drumsticks to go around!”

“That’s amazing!” says the ADVRider. “How do they taste?”

“Don’t know,” says the farmer. “We’ve never caught one!”


Same ADVer, different day, different country road.

He notices a three legged pig in front of this farmhouse, they whole family is around playing with the pig.
Curiosity gets the better of him and he turns up the lane to the farmhouse to see what the deal with the 3 legged pig is.

The farmer steps up to great him as he shuts the bike down.
He greats the farmer and says "I just couldn't help myself. I was cruising down the road and I saw the three legged pig and the whole family enjoying his company. I had to come in and ask the story of the pig.

So the farmer relates the story. "well yes, that pig was born here on the farm. For some reason he took a liking to the kids and the kids being kids started playing with him. Eventually he became a fixture in the family. he even started sleeping in the house with us."
"One night the whole family was woken up because the pig was making such a ruccus. The house was on fire. That pig saved the lives of the whole family. We are very grateful to that pig."
So the ADVer asks "So the pig lost that leg in the fire."

The farmer replies "Oh no. That's not how he lost the leg"

ADVer asks "Well then how did the pig lose his leg."

The farmer replied "Well, you can't eat a pig like that all at once."

So Dan... I've heard that if you want to go past 10 days you need to get the beer off the dead yeast precipitate...

If my fermentation is slow.... Wouldn't that be a good idea?

Nope. On the contrary. Slow start means the yeast are stressed and taking longer to reproduce enough numbers to eat all the sugars. Your flavor will suffer if you don't let em clean up after themselves. I've done huge Russian imperial stouts and Belgian quads both on the cake and with a secondary. I prefer to leave on the cake, single fermentor. They do finish a bit drier, but that's talking a 2-3 month fermentation. In secondary I feel they stay a bit sweeter but the yeast esters are more noticeable.

Many on the homebrewing forums will agree with single vessel for most brews.

The only time I did a secondary on a regular basis were for super light n bright brews that I added hops in the fermentation vessel. I'd transfer off the hops when they settled at the bottom. I feel like I picked up more vegetation flavors if I left it in one. But if it was a heavier brew, the difference is negligible.

The more you mess with it the greater the chance of contamination.

The stuff that settles out isn't all dead. I often took samples of that yeast and made up my next pitch from a cake after transferring a finished brew to a keg two weeks to two months after brew day. One of my regular brews, a simple IPA, I always had fermenting. I'd keg while boiling the next batch, and then put the wort right on the cake in the carboy that was left from the prior batch. Would only clean and toss the yeast after 4-5 batches. You can even propagate proprietary yeast strains from bottle conditioned ales. I harvested some yeast from some rare Belgian imports and grew them out, saved in test tubes in the fridge to use on my own Belgians.

Man... this really makes me want to brew again.

Beer n a Jericho Hill lancero sitting by the pond.

Last time we came down I brought 10 cigars and smoked one. This time I brought 5, and only got one left.

I can't handle being around people constantly. Cigar time is the only me time I get when we come down here. I miss my basement and garage.

Well, I had my annual physical yesterday and the blood work looks mostly good.

I've been on night shift, and eating like crap, for 7 months. Only thing that isn't in the desired range is my cholesterol (206, so not really that bad) and my LDL (147, so kinda bad). Triglycerides are good, and HDL is in range but could come up a little.

I'm sorry, but I'm counting that as a big win since I ain't seen the inside of a gym in awhile. 188 lbs, too. fog

Two nights in a row we wandered off to local breweries, had a beer and filled a growler to take back to finish drinking in the hot tub.

My sunburn hurt too much to be in the tub. Fell asleep by the pool today. Threw a towel over myself beforehand, but it only covered knees to shoulder blades. Got some well defined lines of sunburn
