Gonna slice and strip the jalapenos for tomorrow. Maybe I'll stuff em too. Kinda wanna just toss back another beer and go to bed. Only took a short nap after work this morning, I'm tired.

Spent almost two years learning Latin in school, thinking it would help with my goal of going into pathology. The only thing I remember is conjugation of latin verbs. The rest of my latin knowledge for my biochem undergrad was memorization of the nouns and ZERO application of the language. Waste of time and brain space. But, most has been deleted and reused by now.

When I was a kid they still did Mass in Latin and we had to learn it all. I also had Latin classes for 3 years when schools still had money for things like language classes, art classes and music classes. All I remember now are a few religious phrases, a few Latin quotes from reading and that my name in Latin is Stephanus.

Actually, of the 4 orders I've gotten from CBid this year, two were shipped perfectly on time, the other 2 had very slight delays but nothing to complain about.

Made the poppers. Baked em too long. Jalapenos were a little wrinkled to start, not very fresh so they were already soft. Couldn't pick one up from an end without it flopping over and separating.

Smashed the cheese side in panko crumbs and broiled to crisp the top. Worked perfectly. The top is now the bottom and they got a nice crunch.

Made dipping sauce too. Sour cream with a ranch dressing seasoning packet, and a spicy one with about a tablespoon of some really funky bite your tongue bleu cheese, a couple scoops of sour cream, some caesar dressing, a dash of powdered garlic, a good splash of Torchbearer's Garlic Reaper sauce and a splash of Puckerbutt's Chocolate Plague sauce.

I ate a couple with the hot dip and I found it hot but reasonable, something at the top end of a well rounded eater's heat tolerance. Wife had one and got a light sweat but said it was really good and not too spicy, so I think it's cleared to go. She is slightly above average spice tolerance, but she used about double the sauce I did, so I figure I'm right on.

I should go to bed but I started a batch of collard greens in my dutch oven on the grill. I got maybe 45 minutes left to go.

I'm thankful for another Thanksgiving, even tho we'll celebrate with fewer family and friends...hard to dial back cooking the traditional feast...

Beautiful 72 today. Wifey and I have a 7.2 mile hike planned for early morning in the mountain preserve and then two hour shift at the local soup kitchen. After that it's dinner. Thinking a short nap might also be on the agenda.
