This is the real Chicago pizza.

We don't eat that cheese casserole every time we have a pie. The deep dish stuff is for visitors and tourists. I lived in Chicago proper for a few years, never got a deep dish pizza, nobody even talked about it. We did get a lot of thin crust pub style pizzas and pizzas by the slice.

Cut into squares, not triangles. Bottom has to have some charred bits stuck to it, and the edges are firm and crisp, but the inner crust is soft and chewy.

Aurelios is king of this style in the south suburbs.

I do love me some deep dish pizza, but if someone says they want the best local pizza, I'm not ordering that. I've got Giordanos, Lou Malnatis, and Edwardos within 30 minutes. Go to an hour and I can get Gino's, Connie's, and others.

Fell asleep and the smoker went out. Gonna be a long night. Was hoping to be done by 1-2am, put the butts on at 9.

Butts hit 165 and they're surprisingly probe tender already. Lots of firm spots, nowhere near done but looser than I expected at this temp.

Trayed and wrapped both of them. One in orange juice and canned pineapple slices and poured the pineapple syrup over the top when I did, the other got beef broth and worcestershire sauce poured over. I'm hoping to have a rich meaty batch and a sweet savory batch.

Edit: 30 minutes later with 3 dampers at 1/8" still holding 280 but the meat probes dropped to 158 and 160 with the addition of cold liquids. Snowing now so smoker surface is getting some cooling, I think I'm safe to take a nap for a few hours even though I'm running hot.

I want to find a 250g propane tank to cut up and build an offset smoker. I have loads of walnut and oak wood on my firewood pile and would love to use it for cooking. No camper so haven't been burning any of it on trips so it's just building up as the trees fall. Need a proper smoker or a camper to work through this pile.

Smoking done so I transferred the trays to my indoor elrctric smoker. Set it to 215 and they can sit there till I wake up. I'm spent.

The rumors of my demise have been greatly exaggerated...

Went to the VA at 6am, covid tent was closed so I went into the ER to ask when it opened and they said to wait outside and someone would come out. Nurse came out, took my vitals, swabbed my nostril and sent me packin'...

Just got off the phone with the doctor. Positive for covid.

Doctor asked me if I had any of the shots - nope. Then he said he'd looked over my chart and since I am not obese, diabetic, or on bp meds I should be fine. Told me to rest and get plenty of fluids.

Also told me that in a week or so, if I am fully recovered, it would be beneficial to get the shot. Says if a new variant pops up and I have natural immunity and the shot it would be that much better for me.

Soooo you'll have the natural antibodies (which is stronger than the vaccine) you've already had it, and they want you to take the needle anyway? Curious reasoning and decisioning.

I'm still in the wait and see camp.

Like I said... I've had worse colds/sinus infections than this. Son is good, wife has same symptoms I do and we both seem to be on the mend. *shrug*

ER Nurse and I had a conversation about it. She says the vast majority of folks get it and get over it but the ones she sees are fuggin' wrecked by it. Said that even some young, healthy people had it pretty bad, but they recover. It's the immuno-compromised, old, fat, diabetic and otherwise unhealthy that get whooped.

Antibodies from O-micron provide far less protection from future infection. Just wait for it….it’s coming.

you rang? I also have high blood pressure and asthma...

guess that's why I've been more concerned...plus I see my young grand-kids nearly every day...they're too young to be vaccinated

but Darren, my son, who is younger and as healthy as you, was vaccinated, still got infected and now doesn't enjoy the smell and taste of cigars, let alone food and drink, like he used too. Hopefully, with enough time, he'll regain those senses.

do what you can to minimize the risk...

nearly 10 BILLION doses of the vaccines have been administered throughout the world and without any appreciable negative side effects ... proves their efficacy.

You contradicted yourself, brother Al. Darren was vaccinated... and still got the covid and it made him lose taste and smell. That's not very effective in my opinion.

I understand that everyone is different. Everyone has a different situation. Taking a shot that has proven to be no more than a therapeutic should be an individual choice. I've said this before, if you are at risk... by all means get the shot. You'd be foolish not to. But don't try to convince me it's right for me when I can see with my own eyes that the shot does not work as it was advertised, and otherwise healthy people are either unaware they have it, had it, or get mild symptoms and recover.

Adora got it and she was vaccinated. She got me sick! I was infected with the covid from a vaccinated person!!

We figured out the timeline to how my wife got ‘Rona. The daughter came over that week and had a mild cold. The only weird thing she told us later was it gave her night sweats. It wasn’t a cold, it was O-micron. She gave it to momma!

Now as for the daughter’s Covid-19 journey…

She got Covid-19 in August 2020. That’s the original Covid or…. Covid Classic. Lost taste and smell for three months.

She got double vaccinated in Fall 2021 due to a mandate.

She got Covid-19 again this January.

My triple vaccinated wife got Covid-19 from a double vaccinated once recovered person!

That’s some franking efficacy!

Went to 3Floyds today to pick up some beer. They had a bunch of sours on the list and for the past few years I've really gotten into those styles. In typical 3F fashion, they take the style and turn it up to 11 and their sours are no different. First time I tried one of their sours I had to mix in a cheap beer to get through it, but now I really like them.

Wife can't stand em, says its no different than eating hot sauce. She has a point. It took continued exposure to build a tolerance and now I seek out the extremes.
