My excitement for the softopper coming early was short lived. Just got another email from FedEx saying label was damaged in transit and delivery date is no longer available.

Working on tossing stuff we've accumulated but don't really need. Got about 5yds of a 20yd box filled and going to hit the basement.

New source of anxiety for the day: Anyone have thoughts on how to discreetly relocate about 2000 cigars without a spouse becoming aware of the full extent of the collection? Enquiring minds want to know!

Decided to burn my gift card to the meat store and get a brisket.

I just paid $9.99/lb for usda select packer brisket. Even after gift card that's $6/lb for select. Grocery store sells choice for $6/lb and often on sale for $4.

Points getting turned into tamales. Flats probly gonna need to get chopped n sauced for sammiches.

Also seems like the nursing homes let their dementia wards loose for a shopping day. 3 stores in a row very confused geriatrics holding up the aisles and checkout lanes.

I got a choice brisket from Sam's Club this morning. Gonna smoke it tomorrow. 13+ lbs for $54. Just about $4 a pound for choice beef.

- Start smoking them up.
- Label the tuperdoors as important personal stuff.
- Mix the tuperdoors among all the tools that you have and lost or too lazy to organize so it's easier to buy a new one rather than find the old one. I think I have like 4 saber saws and three drills.

Just ideas off the top of my head. I have never had to use the above scenarios (wink, wink.. nudge nudge, know what I mean, know what I mean).

That's about what they are going for around here for a 12-20 pounder. Thought about grabbing one but what the heck am I going to do with 15lbs of brisket? I love brisket but my freezer is pretty much full.

Yeah I knew the meat store was gonna be expensive, but I figured it would be prime or at least choice. And I was expecting like $6-8 not $10. And to top it all off the label says packed on 10/22. I bought the smallest one with the newest date.

Got it all trimmed up and in the smoker. All the trimmings are in a bowl in the freezer to run through my meat grinder once they firm up.

Definitely disappointed in the meat. Fat cap super thin, silver skin super fat. One giant fat chunk was probably a full pound. The flat had to be trimmed back a lot to get more than 1" of meat.

Should've used the gift card on their $4/lb frozen chickens and made chicken tamales. This is the saddest brisket I've ever seen.

That’s ridiculous. H‑E‑B has prime for $4.67/lb and it surely wasn’t packed over a year ago. Can’t Indiana get fresh meat? Brick wall

I picked up a brisket at H-E-B on Friday. I need to figure out when/how to cook it. Could get smoked…could become barbacoa.

Only reason I went to that store was I had a $50 gift card. They're expensive but they advertise that all their steaks are prime. Ribeye is $27/lb for example. They also dry age meat, wanted $125 for a dry aged tomahawk hanging in the aging fridge. I assumed the briskets would be expensive but high quality. NOPE

They did give me a good price on pork butts last summer but I was buying three cases of butts.

I can get quality briskets from any grocer and they start at choice. Last time I'm going to that meat store for meat.

Another reason I hate gift cards

Honestly, having cooked select, choice and prime briskets... it's a really fatty cut, so the difference between the top 2 is negligible.

Hint for Danm... don't trim the fat off a select brisket before cooking. Trim it off after it's cooked when you're cutting it. I didn't even trim the choice brisket I got. Slathered it with mustard and then put a shitload of kosher salt and coarse grind black pepper.

I'll smoke it for 4-5 hours and then wrap it in pink butcher paper until tender.

I'll try no trim next time I do a good brisket.

When I wrap I add a scoop or two of beef tallow to the butcher paper. I mostly trim on the point and edges after turning it into an oval shape leaving most of the cap on the flat. I like the trimmings for grinding. Got 2 lbs of ground beef from my excessive trimming. This flat was just too thin. Plus this is getting made into tamales so I really don't care that much.

I just wrapped it now. Only 4 hours in, but the bark is set and it's a pretty small brisket.

These are gonna be some expensive ass tamales.

eta: I'm cheating on this one too. When the coals go out, probably around 2200, I'm vac bagging it and letting the sous vide run it at 160 till I'm ready to slice adn shred it tomorrow.

Until Social Justice happened. The company then began hiring people based on skin color and sexual preferences. Oh, and gave those new hires $6 more than the the qualified people who were hired the year before.

Fast forward two years, the company is paying out $1.50 for every $1.00 they are taking in.
I forget whether they just completed their 4th or 5th round of layoffs over the last year recently.

Briskets in the bath. Gonna hold 155 until tomorrow after noon. Should shred nicely. I left a lot of extra length on the vac bags to reseal if necessary.

Yup... got the smoker going and dropped the brisket on at 0700. I'll wrap it at 1100 and put some beef tallow, as well. Got some really good stuff off Amazon. South Chicago Packing Wagyu beef tallow.

Coffee now... dog walk soon..

Suggestions and offers of safekeeping at loan shark rates were appreciated. I went the generic label box route. Still waiting for the 165qt coolerdor to come up in conversation. Ain't no hiding that one

About halfway through the basement. Been avoiding the half with my tools and related materials, but will prolly have to start digging into it today

Happy and blessed Sunday to all. Drizzling outside. Lazy day. One plus... you don't have to shovel rain.

Braised beef in the oven, prolly a couple more hours to go. Figger it will be ready to eat around 2ish. Chili in the crock pot, I'll eat that later.

I predict a nap in the future while watching some football mixed in with cleaning up the kitchen and typical house chores. I have not set a schedule. They will happen in no particular order and on my on my time line.

A tablet is due to be delivered today for a gift so prolly spend some time getting rid of bloatware and setting it up for the recipient. I'll have to somehow secretly get their email password to set up the email account on it so the tablet will be all set when they open it.

Maybe the best way is to just blatantly ask them for it and let the person know what they are getting and have other gifts hidden behind the scenes... like pictures of Drafter's boobs.

I was thinking about that not too long ago. I have no idea how I would ever pack and move. It would be multiple semi trucks. Hell, when I moved here from an apartment it took 3 trips with my car trailer and I've accumulated 13 more years of stuff and two additional humans.

I'm never gonna move, I'll just build a barn.

Checked the brisket. Still too tough to shred but it's delicious. Sealed back up I'll check again in a few hours.

Soaking the dried chiles and corn husks. Might as well start on the masa while I wait.

We didnt plan on moving, we were forced to, so we hadn't been trying to get rid of stuff...

The move up here was freaking crazy to say the least. It took the second biggest uhaul (20 footer?), two full size pickup trucks, and two small suv's. That's after we got rid of the old couch and gave the neighbor our elliptical.

Even then, the wife drove all the way back to get our fish, fish tank, and stand.

Since then we have gotten a ton of stuff for this place. The power tools and mowers alone would take up a couple trucks worth of room. It's amazing how many small engines it takes to keep this place going.

I'm with Danm on just building a barn as opposed to moving again. No employer could force us to move from here either--no mortgage or rent. I own this place. This was my shtf spot and we've done too much work to leave now... Plus it's beautiful here. Got my own nature preserve...

We just assembled a 14x16 shed. That will allow us to take the "junk" out of the last unfinished bedroom so we can finally work on it.

Chainsaw'n some unwanted trees and remodeling that last room is what were going to work on this winter.

For you chainsaw guys, I got a small Stihl MS180 (32cc) and a mid size Stihl MS271 (50cc). Run a 14" bar on the 180 and a 16" bar on the 271. The 271 was decent with the standard 18" bar but it would bog down some, and wasn't "balanced" imo. It screams with that 16" bar though.

FYI my chainsaw experience is limited. Lol I'm learning...I was into hiking, smallmouth bass fishing and nature photography. This running a plantation thing wasn't on my radar.

Haven't had a cat in a few years even though I grew up with dogs and cats most of my life. This summer we welcomed a cat into our house. He's very curious on anything new. Christmas tree is up and he wants to be involved... aka try to climb that tree thing.

I'm going to have to by a squirt gun. I figure it will work a few times but he will likely learn to tough it out (stupid human thinks a squirt gun can stop me from investigating).

Bucky, Jessie the Cat 🙀 is just as curious, put up a 4'tree,versus the larger tree 🎄 we had up last year,Jessie decided it was time to explore the new tree and climb up and under the tree. So I sprayed a peppermint mixture around the area she was climbing on and around the base of the tree and so far she's given up on sneaking under the tree.Think

When my cat was younger he'd play with the tree a little but wasn't too bad so I never had to deal with it more than rehang an ornament. Now that he's 19 he loves when the tree comes out so he can lay on the tree skirt that covers a floor register.

Brisket still wasn't quite done but I ran out of patience. Picked the point apart by hand and was able to remove a lot of unrendered connective tissues. The flat got seared on the grill at 500 to restore the bark. Sliced n bagged it, tried a slice - its just okay. Texture is decent but this thing was too lean. Even that big fat vein that runs through the middle barely separated the meat. Maybe 1/8" fat vein. The shredded point is braising in the red sauce for another hour or two should be good enough for tamales.

I'm still pissed off about this brisket. If it wasn't so fuggin expensive I wouldn't care. But $10/lb is the same as ordering a premium one from snake River farms. Hell, $12/lb gets you their "American wagyu" brisket.

7am-4pm... 200 or so degrees and the brisket was done. Rested it for an hour and sliced it up. Damn good stuff...

Neighbors are happy... they got some.
