As much as we like the forum to be allowed to run free, it sure would be nice to see some of the troll accounts shut down.

Wife gave me a whiskey cup with a built in cigar rest for my birthday. Interesting but inconvenient to actually use. Drank some bourbon from it tho.

Also a sous vide cooker. Might try a steak for the first time in 20 years. I absolutely hated it growing up probably because my parents cook everything well done and no seasoning just chewy grey chunks of meat. But from that I developed an aversion to beef in general, it has to be so heavily seasoned that it has no beef flavor left. I've learned to like chicken, I've learned to like pork, I've learned to like seafood. All it took is to learn how to cook it right. I think this will be the best shot at learning to like beef.

I'm the same way with seafood/fish. I've tried all kinds of water creatures but don't like any of them no matter how they are prepared. Raw, steamed, boiled, grilled, baked, fried... About the only thing I could choke down would be a blackened sword fish or tuna steak that is so blackened and seasoned that there is no resemblance of fish or fish flavor.

I'll cook fish and stuff for others but buying any seafood for me is a waste of time and money.

^And both of them are weird... (no offense). Seafood is one of my faves. Shrimp, crab, lawbstah, clams, quahogs, scallops, fish... if I still lived in RI I would have developed gout years ago because I'd eat shellfish all the freakin' time.

Danm... you'll love the sous vide method. Season a couple of 1" thick ribeyes with kosher salt and fresh cracked pepper. Don't be stingy with the seasoning, but be sure to use kosher salt. Let them sit at room temp for a couple hours. Vacuum seal them and pop them into 125 degree water for 2 hours. Pull them out of the bag, pat them dry and char them for 2 minutes a side on a really hot grill or a cast iron pan with a bit of oil that'll hold up to the heat.

Then let 'em rest for a few minutes and dig in.

Just as long as it's not the other way around.

I don't eat very much beef since it clogs the pipes. Growing up the only beef we ever had was "stew meat" which was prolly the least expensive cut available. Occasionally we raised a cow or two for slaughter but that was sold off to others and we kept very little of the meat. Not really a big fan of pork or lamb either so it's mostly chicken, turkey and most any sea food. Love me some oysters cooked or raw and looking forward in indulging in some on our trip to New England in a few weeks.

HGN, PBT, then a full breath/blood test.

Technically, you don't need field sobriety tests to arrest for DUI, they are just additional evidence of your drunkeness for the police to use.

TL;DR - refuse any field sobriety tests, they wont help you. I mean, how many times you ever hear of a buddy saying "I got pulled over for DUI but I aced the roadside tests so they let me go!" Yeah, never.

If you want to see nystagmus, have a co-worker spin around a bunch in their chair and then stop them and ask them to look right at you. Watch their eyes bounce side to side, especially when they try to focus all the way to the right and left limits.

Went to the grocery store thinking I'd buy a ribeye to sous vide but the cheapest one other than the thin cut sandwich steaks was $24. Maybe steak isn't on the menu, that's way more than I'm willing to pay for a meal. Sure it could be two meals and split it with the wife but she won't even consider eating beef other than hamburger. I bought a couple whole tenderloins a few years ago when they were on sale for $4/lb and after I broke them down I cut a few filets and she wouldn't even try it. So splitting a $25 ribeye wasn't gonna happen. Both tenderloins ended up being used for cheesesteaks and fajitas.

I instead made some eggs which didn't turn out the way the recipe suggested (soft boiled solid whites buttery yolk) Came out with liquid whites and buttery yolk. So I tried a thing I've wanted to try for a long time and breaded the yolks and fried them. Pretty good but meh.. not my favorite. Many years back we went to a fancy restaurant in chicago with some friends and they had breaded fried egg yolks on the menu for a pretty penny and I've always been curious how it could even be done. Now I know. Poured the whites into a pan and crushed the shells into it cooked it up and fed that to the chickens.

Checked the butcher shop to see what their steak prices were. It was a lot more. Ribeye was $22/lb. But their chickens were cheap ...ish. $1.69/lb for whole chickens so I got one of those (I used to never buy unless it was under $0.90/lb). Picked up a couple pork tenderloins too, but they weren't cheap $5/lb fair enough with the current meat prices. I rubbed and then threw the chicken on the smoker for 20 minutes over oak, then vacuum sealed it and dropped it in the bath at 150 for 6 hours. Should be done pretty soon. I'll cook the tenderloins tomorrow, they got rubbed and vac packed to sit in the fridge overnight. I think the chicken and pork will be fantastic. Not sure if I should've cooked the chicken first and then smoked or smoke first then cook. My thinking was let it absorb the smoke while raw and cool and hopefully it will permeate while slow cooking in the bathtub. We'll see.

While waiting for the sous vide chicken to cook I made a batch of tamales with leftover pulled pork from the freezer.

Family birthday party on Friday and Sunday so I've got my dish to bring for both.

Went to the commissary today. They sell everything at cost and add a 5% surcharge to your final bill to keep the lights on and the employees paid (except the baggers... they work for tips only).

You would be amazed at how much food is marked up by grocery stores. Prime ribeyes... they had 2 of them in a pack for $22.
