Morning folks. Off to Barrett-Jackson auction for the day. The neighbor is hoping he gets enough from his Corvette to buy another car he wants to bid on. I told him he should sell it himself and save the approx $8000-9000 he is going to pay in commission but he didn't want to take the time and the hassle.

LOL, the Ozarks are TAME compared to some parts of TN and NE Alabama!!!!!

Trust me, I've lived in TN most of my life, except for a spell of shacking up with a woman in NE Alabama, just a couple of miles from the Little River Gorge. She was half Yaqui Indian, and her Sister worked for the Country group Alabama. Interesting, BUT backwards area!!!

Trying my new instant pot for a batch of refried beans. Someone at work has a grocery delivery subscription thing and they gave her a dozen giant jalapenos, so she gave em to me. Didn't know what to do with them, thought about making hot sauce or salsa but I have tons already. Figured I'd make some beans. Well see how this turns out.

It was really the main reason I wanted an instant pot, for beans. Sposeda be able to make a batch in an hour without soaking, instead of an overnight soak and 6-8 hours cook time.

Took four 1.5" thick pork chops out of the freezer too. Gonna sear em and toss em in the pot to cook after the beans.

Wife and I gave ours to one of our daughters, although I really didn't get a say in it, GRRRR!

Exactly the same thing I was considering was big pots of beans. I think I mentioned that to my wife, now that I think on it, she likely considered the aftermath!!!! I already "supposedly" wake her up in the night with some loud farts! I scared the hell out of one of the little Chihuahuas that Ikes to get under the covers and use me for his heating pad, LMAO! Now, he sleeps between my shoulder blades, I have to sleep on my side most of the time, so he roams in and out as he gets too hot and sweats me out as well!!

Ya'll must be headed down 45 to I-10, it gets REAL Deep South between Citronelle, Al. before you get down to Mobile.


My brother lived in or around Meridian for years, mostly working for the G,M,&O, then the IC bought them and became ICG RR. I know that area well. Used 45 to go to Gulf Shores as well as the panhandle MANY times.

That's not a and drive, not much traffic and only a short 40-50 mils of road that's NOT divided. That's the stretch around Citronelle to a "cut over" that hits I-65 into Mobile. That's a handy shortcut!

Got my tamales finally.

Place was tiny. Front door opens basically into the kitchen. Just one room. Dozen tamales in two packs, 8 per pack. They cant count.

Tamales were delicious! Meat was perfect, masa was just slightly too lard heavy I prefer a fluffier masa but I love em. Hits the spot. Half went to the fridge, half to the freezer.

Refried beans and jalapenos are done and mashed, gotta put em in containers and freeze.

Got my cast iron skillet outta the camper to sear the chops.

Butter carmelized two onions, salt n peppered my thick chops and coated them in flour. I saved about two cups of the bean cooking liquid before I mashed em. Pan seared the chops in butter and put the chops, onions, pan deglaze drippings, and the seasoned bean juice into the instant pot.

Hope it turns out!

No nicotine detected.

Cotinine detected at 2.7ng/mL which is within the allowable range for environmental exposure.

Have been checking BP daily since then and never got a reading as high as that morning. I think it was cause it was right after work, I hadn't eaten in 15 hours, and was cranky and stressed. Had a cigar last night.
